Do you ever have those crazy days where you are just exhausted and need a quick and tasty meal? Pizza is a great go to, but when you have had a lot of pizza throughout the past month, you need something a little different. These Pepperoni Bread Rollups is the perfect meal for any busy household!
The only ingredients these little rollups require are bread dough, pepperoni, mozzarella cheese, and marinara sauce. Well, I didn’t have the bread dough, but I made my own from this recipe. It is my absolute favorite pizza dough recipe. The crust comes out soft on the inside with a slight crunch on the outside. Every time I make it my hubby describes how delicious the crust is like he is writing a cookbook.
To make the dough, I add the water and yeast to my bread machine pan. I let it sit for about 7 minutes to make sure the yeast foams up a bit. Then I add the olive oil, flour, sugar, and salt. I put the pan in the bread machine and let it run on the “Dough” setting. Once this process is complete, I have my dough for the rollups.
Since the dough makes 2 servings, I cut the dough in half and save the other half for another recipe. I place the other half on a cookie dough sheet and roll it out until it is about 1/4in thick. The dough should cover the whole cookie sheet. I take all of the pepperoni from the package and spread it evenly across the dough. I, then, cover the pepperoni with mozzarella cheese. I carefully begin to roll the edges of the dough on the longer side of the cookie sheet. Be careful rolling the dough because it can catch and tear easily. Roll the dough making sure to roll the entire row equally (ex. don’t roll the left side and then the right). Make sure to gently push the dough into the rolling crease as you go to make a tighter roll so less air breaks through.
Once the dough is rolled, place the seam side of the dough rollup onto the cookie sheet. This will make sure the dough doesn’t separate at the crease as the dough cooks and rises. Place in the oven and cook for 15 to 20 minutes. Once the dough appear very lightly tanned, take out the roll and let it rest for 15 to 20 minutes. Leave it on the cookie sheet so it can continue to cook the roll on the inside. Finally, cut the roll in diagonal pieces and serve with marinara sauce and a side salad. Enjoy!
