Healthy Recipe Roundup

Eating healthy is important for me and my family. I want the best for my kiddos, my husband, and I. I understand how the different foods that we put into our bodies can make us feel amazing and full of energy or completely exhausted. Healthy food keeps us fit and trim. It can be even more delicious than it’s deliciously sweet counterparts. Eating healthy makes us feel in control and like all is right in the world…. But you have to do it right.

What I mean by this, is that you have to have the right recipes that make you go, “Mmmmmmmm.” Sometimes I’ll read about how celebrities lost all of their baby weight, and I think, “Chicken breasts and spinach? Really?” I told my husband when we met that I was a healthy eater, but that I knew how to cook. If it tastes bad, I wouldn’t eat it, so he had nothing to worry about. With all that said, I believe in attempting new things, even when we are unsure. I even believe in making ourselves eat a bit of this and a bit of that if it is healthy and we don’t necessarily like it.

BUT….life is about experiencing. It is about beauty and wonder. Textures, colors, and tastes. It is about butters, sugars, and creams sometimes. Balance is key, not abolishing various goodies from your fridge. Well, at least that’s the only way I envision a truly healthy life.

So here are a few recipes that my family and I have tried out. They are all delicious and husband approved. They don’t include too many ingredients. All of them fall under the category of health because they are either lower calorie, lower points, or fewer ingredients, all of which point to better health. Low Carb Chicken, Bacon, Ranch , and Romaine Lettuce Rollup

I couldn’t resist putting this recipe up front. This is my own creation that is to die for! It is light, low carb, and low calorie. It is easy to make and delicious. I usually make it for lunch. It fills me up and makes me feel like I have indulged, too!

Chicken Parmesan Burgers

My hubby loves this one!  It is savory and filling while filling our healthy quota for the day!  If you are following WW Points+ program, it’s 6pp for one!  Woot!  This recipe is super easy to make, and it makes a lot.  I mean who doesn’t like chicken parm?  And to put it on a burger?  Um, genius!

WW Buffalo Chicken Lasagna

Oh. My. Heart.  This is oh so delicious.  Again, it makes a lot, so it lasts awhile.  It is so good though that you may want seconds.  Just being honest.  It has the perfect amount of spice and flavor.  Plus, it’s low in WW Points!  Try it out and let me know what you think!

WW Chicken Ranch Pasta

Another incredible recipe that lasts awhile!  This is super easy to make, has fewer ingredients, and it is loved by the family.  It is super flavorful without being overpowering.  It’s only 7 PP and 7 Smartpoints for Weight Watcher followers.  The ingredients really combine well to make a light and filling meal.

Chocolate Mousse Filled Strawberries

I took these to my baby shower, and they were a hit!  Personally, I love these because they are a healthy treat that others will love as well.  I know when I take these to a party I can have a few, feel like I have indulged, yet come home without feeling stuffed or bloated.  These are a life saver and your friends will appreciate the healthy treat!

Honey Mustard Chicken Casserole

This is definitely a favorite in our household.  My hubby loves it, I love it, and my kiddo loves it.  My hubby actually asks me to make this every few weeks, and he doesn’t ask me to make anything in particular usually!  It’s quick and easy to make.  The sour cream and honey mustard work really well together to make a creamy dish.  Uh!  Delish!

Salsa Roll-ups

One of my friends actually made this dish for a get together we had.  They were amazing and went fast!  I only got two 🙁  But anyways, the point is that they were delicious.  They aren’t very spicy but you can taste all the intricate flavors.  They are creamy and filling, but so healthy!  Make them with fresh salsa and they are to die for!  Take them to a party, and let me know how they do!

Deep Dish Pizza Casserole

Let me start by saying I love pizza, but this takes it to a whole new level.  I haven’t had deep dish pizza before, but this is so delicious I don’t think I need anything else but this.  It is delicately sweet and savory.  It’s filling while being lower in calories and WW points.  It makes a ton, and a small piece goes a long way.  It’s truly life changing!  Try it!

Blueberry Oatmeal Breakfast Bars

These are beautiful and delicious.  This recipe actually surprised me as to how yummy it is.  The bars are warm, creamy, sweet, and a little tart when they come out of the oven.  They are incredible.  You actually get a little sick of them because one just doesn’t seem to be enough, and after you have eaten half the pan, you begin to question your willpower.  These are absolutely incredible though!  So if you dare, and if you have the willpower, try these out!

Cottage Honey Toast Recipe

This may look disgusting, but it is one of my favorite recipes.  It’s super easy to make in the mornings, and it’s the perfect blend of sweet and salty.  The toast is light while the cottage cheese and honey mix to make a flavorful topping.  Uh!  I want some now.  It’s a nice light breakfast that fills you up just enough, and it is filled with protein to give you energy!  It’s the perfect breakfast!

Dorito’s Taco Salad

This recipe has been in my book since I was a kiddo.  My mom actually used to make this when she was on WW.  It is a delicious light and filling recipe.  It’s super easy to make, will feed the whole family, and it is filled with healthy foods.  Salad and Dorito’s?  Who would want more!  It’s sooooo good!  Try it tonight!

WW Veggie Ranch Pizza

So this is another recipe I grew up on.  My mother used to make this.  My grandmother used to make this.  I used to make this.  There are so many reasons why this is so delicious.  First of all, it is loaded with veggies.  It’s creamy and tangy.  The crust is delicious, and the toppings are light and succulent.  It’s the perfect party appetizer, too!  It’s a delicious veggie pizza!  Who doesn’t want that?
